A coconut beverage to drink. The conconut contains both coconut water, which is clear, and the soft white meat lining the inside. Scraping out the coconut meat and then squeezing it produces coconut milk.

Monday

I tried calling Suzy Monday morning to make arrangements for surfing, but was only able to leave a message. On the chance that she would call I headed up to the same spot I'd met her on Saturday and looked around for her. No luck, and I hadn't heard back, so I drove around the north shore and finally headed back. Suzy called as I headed back and said they were having a group at 10, but that was too late to meet Bill for lunch so I just kept going back to Laie. I did manage to buy a fresh coconut on the way. The juice was pretty good, but I decided that the raw meet isn't so great, at least not in my opinion. I didn't get to try the milk, but I think it would be better.

Since I wasn't able to surf, I grabbed a boogie board and headed over to Hukilau. The waves were lame so I left the board in the truck and jogged up and down the beach. Ah, so refreshing and relaxing. When I got back to the parking lot the waves had gotten bigger so I grabbed the board and headed into the water for a bit before heading back home.

At lunch in the BYU Hawaii cafeteria I had a sandwich with huge slices of bread. For desert I had a scoop of coconut pineapple ice cream which I very much enjoyed.

I planned to spend the afternoon wind surfing on the eastern shore, so off I went. The drive was beautiful but I didn't arrive at the rental place until almost 4 pm and they were only open until 5. Watching at the beach would have to do and I'll save wind surfing for another day. The rush hour traffic back north was moderate, but the mountains remained stunningly.

After dinner I headed to campus for Family Home Evening (FHE) with the same ward that I'd gone to church with on Sunday. Only about 5 people showed up and we were planning to head over to the temple visitor's center. Offered my car to help transport people but when we arrived it was about to close. Back to campus we went and sat at a picnic bench outside the student center to talk. The other people were fascinating, one girl was a recent convert from Russia. Another guy related a few recent brushes with death in the way of car accidents and a near drowning. Everyone has interesting things to relate. BYU Hawaii has a very diverse student body and although the environment has the same Mormon feel as Provo, there seems to be a lot more breadth to people's experiences.
